Tuscan Tuna Salad

Did I mention I’m doing Whole30? Probably not since it’s more like the Whole26. Don’t judge. I haven’t had the will power to stick with it because of a family Christmas celebration, Leo’s birthday and a little happy hour. I know. I’m weak but I’m glad to have still do it partially. My joints feel better, I’m not as tired and huge bonus, my clothes fit better. Who knows, maybe I’ll just stick with this way of eating giving myself a break here and there.

I’ve noticed these COLD winter months can be really hard to get excited about salads or just fresh produce in general. I have a natural desire for carbs and heavy, warm foods. Maybe that’s why I gravitate towards a salad that’s mostly protein and room temperature, like this tuna salad. This one is packed with lots of flavor and keeps me full all afternoon with 27 grams of protein. AND it’s Whole30 approved.

Tuscan Tuna Salad

Ingredients
  • 1 4oz can of tuna in water
  • a handful of cherry or grape tomatoes, halved
  • 2 tablespoons olive tapenade, I like Trader Joes
  • 2 tablespoons capers
  • ¼ cup diced cucumber
  • ¼ cup diced sweet pepper
  • 2 teaspoons olive oil
  • a squeeze of lemon juice
  • a dash of red wine vinegar
  • salt and pepper
  • fresh basil
Instructions
  1. Mix all ingredients together and serve
  2. Garnish with fresh basil

Fish Tacos

fish tacosHello internet! After a long break, I’m back posting some healthy recipes. I’ll admit, I wasn’t on my best Jodi this holiday mainly because the husband and I were enjoying lots of drinks while he was home. It was a lot of fun but it’s definitely time to get back on the healthy train.

This recipe takes a little bit of prep but cook time is quick. It’s in heavy rotation at our house and sometimes I’ll add more fancy stuff like coconut avocado cream (recipe to come) but in a pinch, this fills all my taco desires, any time of the year.

Ingredients
  • 1 lb of tilapia or another flaky white fish of your preference
  • 1 Tablespoon coconut oil
  • 1 cup sliced cabbage
  • 1 lime, juiced and 2 teaspoon zest
  • 1 teaspoon salt
  • 1 teaspoon apple cider vinegar
  • 4 corn tortillas
  • 2 avocados, diced
  • 2 radishes, thinly sliced
  • 1 small bunch of cilantro, about 1 cup chopped
Instructions
  1. Preheat oven to 400ªF
  2. Rub coconut oil on a foil-lined baking sheet.
  3. Sprinkle the fish with ½ the salt and ½ the lime zest
  4. Cover the fish with another large piece of foil and pinch it shut making sure it's sealed
  5. Place in the oven and cook for 20-25 minutes until fish flakes
  6. Toss the cabbage with vinegar, lime juice, remaining zest and salt.
  7. Warm tortillas in the microwave for 30 seconds
  8. Top with cabbage, fish, avocado, radishes and cilantro.

Baked Cod with Roasted Tomatoes

CodI didn’t post yet this week due to the extra work I needed to get my blog more organized. Oh and my Mom visited and we pretty much FINISHED our Christmas shopping. Feels so good.

Cod has become my new favorite fish to make at home. It takes minimal work and super quick to cook in the oven, stovetop or grill. This recipe could easily be replaced with Tilapia or another flakey white fish you prefer. Cod usually runs a little cheaper, especially the frozen kind at Trader Joes. Although, fresh always tastes the best.

Baked Cod with Roasted Tomatoes

Ingredients
  • 4 cod fillets, each about 8 ounces
  • 1 T olive oil
  • 2 sprigs of thyme
  • 2 cups grape tomatoes
  • ¼ cup white wine
  • 1 crushed garlic clove
  • lemon (optional)
Instructions
  1. Preheat over to 400°F
  2. Place tomatoes in a 9X13 baking dish with ½ T of olive oil and salted
  3. Roast the tomatoes for 15 minutes
  4. Remove the tomatoes and decrease temperature of the oven to 350°F
  5. Mix the thyme, remainder of olive oil, white wine and garlic into the tomatoes
  6. Place the cod on top of the mixture and sprinkle with salt and pepper
  7. Cover with foil and bake for 10-15 minutes depending on thickness of the fish
  8. Season with lemon juice
