Spumoni Ice Cream Pie

Pistachios+cherries+chocolate in pie form=AMAZING! The Italian restaurant I worked at during my college days used to serve spumoni ice cream. It was one of my favorite desserts they offered because of the sweet saltiness. To make this dairy free, you’ll need to run to the store for some specific products like Coconut Bliss Cherry Ice Cream, So Delicious Coconut Whip Cream (or homemade), Santa Cruz Chocolate Syrup and some Enjoy Life Mini Chocolate Chips. It’s definitely worth it!

Ingredients
  • CRUST
  • 1 cup pistachios
  • ½ cup unsweetened coconut
  • 2 Tablespoons maple syrup
  • ½ teaspoon salt
  • FILLING
  • 2 pints of Coconut Bliss Amaretto Cherry Ice Cream, thawed for 10 minutes at room temperature
  • 3 Tablespoons of chocolate syrup
  • 1 carton of Coconut Whip Cream, thawed in the refridgerator
  • a handful of Enjoy Life mini chocolate chips
  • CHERRY SAUCE
  • 3 Tablespoons cherry juice or preserves
  • 2 Tablespoons coconut cream
  • 1½ teaspoons coconut oil
  • (optional) ½ teaspoon honey
Instructions
  1. Process pistachios with coconut, syrup and salt until roughly ground
  2. Using wet finger tips, press the mixture into a pie pan spreading up the sides
  3. Put in the freezers to form for about an hour
  4. Add the ice cream and spread evenly
  5. Pour the chocolate syrup over the ice cream and freeze again for another hour
  6. Spread the whip cream next and top with chocolate chips
  7. Freeze for another hour
  8. To make the cherry sauce, combine cherry juice, oil, milk and honey into a small saucepan over low heat and mix until well combined
  9. Let it cool before drizzling over the pie

Cranberry Apple Smoothie

This house is SOOOO excited for Thanksgiving! We’ve been talking about what we are thankful for, donating goods and volunteering our time, and of course I’ve been cooking up a storm trying new recipes. I try really hard not to get overwhelmed with all the to-do’s this time of year by writing and planning a ton. It sounds counter-intuitive I know but just getting it out of my head and onto some paper or in my phone calms my nerves. I never considered myself a planner until I had kids and I think this is because everything else involving kids is totally unpredictable and out of your control. I mean, how many times a year can a child come down with some sickness and an entire week can be gone? I know mine excel at that in the winter.

One thing I know is having a smoothie five days a week for breakfast has really streamlined our morning routine. Gosh I sound like such a dork but it’s so true! I always have some sort of frozen fruit, juice or milk alternative on hand, some protein additions and wa-la! Breakfast is served. I thought up this recipe after realizing I only consume cranberries this time of year which needs to change. Did you know they are considered healthier than spinach?! According to WebMD they have more antioxidants which make them disease fighters. (See reference to kid sickness above.)

 

Cranberry Apple Smoothie

Ingredients
  • ¾ cup cranberries (fresh or frozen)
  • 1 small apple, preferably a sweet red variety
  • ½ cup carrot juice
  • ¼ cup orange juice
  • ¼ cup coconut milk (I used Thai Kitchen, canned)
  • 1 scoop or tablespoon collagen or protein powder of your preference
  • ½ teaspoon fresh ginger
  • 1 teaspoon hemp or chia seeds
  • 2 walnuts
  • 5 ice cubes
Instructions
  1. Place all ingredients into a high speed blender and blend for a minute. Serve immediately or freeze into cube.

Vegan Shamrock Shake

I have a vivid memory trying the McDonald’s Shamrock Shake for the first time. My mind was blown. My stomach, well, it wasn’t as happy. If it isn’t already clear by my blog, I have a love for all things mint so naturally I’ve tried to recreate the infamous shake more than once following recipes online. Nothing really satisfied me so I started experimenting on my own. The result is below and I am very pleased. Two thumbs up from the entire family.

Celery and Grapefruit Salad

Celery_Grapefruit_Salad_loHappy 2017! Naturally, my first post of the year is a salad. Even though I’m not a big new years resolution kind of gal, I certainly can appreciate the need to eat better after too many cookies. Seriously, I made my peppermint cookies at least a half dozen times over the course of a month. Could. Not. Stop.

This time of year is tricky when it comes to seasonal produce or lack there of but one thing I seem to always have on hand is celery, my soup staple and dip boat. This salad is chalk full of the refreshing and crunchy vegetable and even includes the greens so don’t pitch ’em. You could easily use some fancy oils like hazelnut or walnut for more complex flavors but the salad is good as is and who wants to go buy an $8 bottle of oil that will likely go rancid before using it all. Practicality wins in my book!

Celery and Grapefruit Salad

Ingredients
  • 3 celery sticks
  • ½ chopped fennel bulb
  • 1 grapefruit, peeled and sliced to your liking
  • 2 T roughly chopped celery leaves
  • 1 scallion, thinly sliced crosswise
  • 3 T hazelnuts or walnuts, roasted and chopped
  • ½ teaspoon minced garlic
  • ¼ cup olive oil
  • ⅛ cup lemon juice
  • salt and pepper
Instructions
  1. Roast hazelnuts or walnut at 350 F until brown (about 5 minutes) cool completely before roughly chopping
  2. Mix together grapefruit, celery, fennel, celery leaves and green onion into a medium sized bowl
  3. Whisk together minced garlic, oil and lemon juice and drizzle into the salad
  4. Toss and garnish with chopped hazelnuts and salt and pepper

Kale Beet Salad

kale_beet_salad_loGeez. The holidays aren’t even upon us and I’m already throwing kale onto the site. I can’t apologize. This recipe was pretty much by accident and turned out delicious so I must share it. I’ve been wanting to post a kale recipe but I’ve ESPECIALLY been wanting to make a recipe with toasted walnuts because they are the BEST complement to any salad.

Now since I can’t add two recipes with my software, below is the hemp dressing I whipped up that paired well:
HEMP VINAIGRETTE
3 Tablespoons apple cider vinegar
4 Tablespoons olive or avocado oil
1 teaspoon maple syrup (omit for Whole30)
1 teaspoon hemp seeds

Kale Beet Salad

Ingredients
  • 3-4 beets, cooked, peeled and quartered (I used the packaged kind all ready to go)
  • ½ bunch (or about 6 leaves) of dino kale, stems removed and roughly chopped
  • 2 slices of red onion, quartered
  • ½ cup of dried apple slices, cut up
  • ½ cup of toasted walnuts, chopped, (to toast place on a baking sheet into the 400° oven for 5 minutes or slightly darkened)
Instructions
  1. Toss all the ingredients together
  2. Drizzle with the dressing and toss again with your hands, paying special attention to coat the kale

Watermelon Salad

It’s summer in full swing which means loads of fresh produce with little effort, right?! That’s been my motto anyways. I feel way more like a prep cook just slicing and dicing. I also have a wedding I’m bridesmaiding in a matter of days so all baking and sweet dishes are going to have to wait till after. Let’s just say I’ve been scheming an ice cream dessert for quite a while I hope to attack. Oh and that breakfast cookie I teased everyone with on instagram.

Watermelon has been so incredible these last few weeks and my family has already eaten three whole ones. The girls devour it. I’m an overachiever myself. This salad has made it especially wonderful. It’s a play on an appetizer a friend of mine introduced me to years ago that included buffalo mozzarella. That would also make a great addition to the salad if you can eat cheese. That or feta or ricotta salata.

  • 1 cup cubed watermelon
  • 1 cup halved tomatoes, cherry or grape
  • ¾ cup diced seedless cucumber
  • small bunch of mint, finely diced

  1. Prep first 5 ingredients and mix into a bowl
  2. Whisk balsamic and honey together or use a already prepared glaze to drizzle over the salad

Chocolate Cherry Smoothie

It makes this Mom an emotional mess. So that led me to this amazing recipe. -----Chocolate. In a jar. Yes, it's so satisfying and a wonderful mid-day snack when you need a big boost OR a tear-catcher. Whatever the reason, I'll have you know it's also good for your body. Packed with lots of good fats, protein and flavor, making it almost feel like a treat.

Pistachio Pesto

I’ve been working on a good pesto for a while and I think this one hits the nail on the head. Typically pesto has parmesan so I had to find a replacement that could give it a nutty flavor paired with the garlic and herbs. This is what I came up with. Just to note, I don’t digest garlic very well so I use it sparingly. If you are a garlic lover, by all means add more. I paired the shrimp with my monster noodles and some roasted tomatoes I stuck in the oven till they wilted a bit. Sure was tasty.

Ingredients
  • ½ cup olive oil
  • 2 T packed basil leaves
  • 2 T flat parsley
  • 1 T lemon juice
  • 3 T pistachios
  • 2 garlic cloves
  • splash of white wine vinegar
Instructions
  1. Place olive oil, basil, parsley, lemon juice, pistachios, garlic into food processor and pulse till it resembles a pulp. Add more olive oil if a thinner pesto is preferred.
  2. Pesto can be tossed with shrimp, zucchini noodles and roasted tomatoes

Sorta Healthy Cookie Dough

Sorta_Healthy_Cookie_DoughIs it just a coincidence Valentine’s Day, the day of sweets and chocolate, lands in the middle of February when most of the New Year’s resolutions have gone by the wayside and the weather is craptastic? Probably not. I know I’ve been feeling the urge. The urge to bulk up and give into cravings. Which brings me to my next point…

Chocolate chip cookies are my weakness, or strength depending on how you look at it. I love making them just about as much as I like eating them. It’s the one thing I’ve cheated since going gluten free. However, gluten-free flours just don’t do it for me so that led me to the dough. Cookie dough makes me feel like a kid. Although it’s not the same as a warm cookie, it does satisfy a good craving. This recipe could probably use a little more tinkering but myself and my kids were quite happy with the results. Desperation? Perhaps. Either way, I think it’s worth sharing.

Ingredients
  • ½ cup + 1 Tablespoon maple syrup
  • ⅛ cup non-dairy milk, I used cashew
  • ¼ cup coconut oil, melted, could sub nonhydrogenated margarine
  • ½ teaspoon vanilla extract
  • 1¼ cup almond meal/flour
  • ¼ or less teaspoon salt
  • ½ cup dairy free chocolate chips
Instructions
  1. In a large mixing bowl, combine the syrup and milk
  2. Add the oil and vanilla until combined
  3. Add the salt and flour until dough like. You may need to add more if your almond meal is grainy
  4. Fold in the chocolate chips
  5. Place a sheet of parchment or wax paper onto a cookie sheet or flat surface
  6. Scoop balls of the dough onto the paper and freeze for at least one hour

Cucumber Mint Smoothie

pineapple_smoothieWell hey, we are over halfway thru January. Are you all tired of your smoothie recipes you adapted at the beginning of the year? I definitely get bored with mine and this recipe was my attempt at trying something new. I generally use the formula, two vegetables for every fruit but the ratio might be off a bit with this one due to the amount of fruit. Of course, that means it tastes perfectly sweet. Refreshing in fact.

Cucumber Mint Smoothie

Ingredients
  • 1 cucumber
  • 1 celery stalk
  • 1 cup fresh or frozen pineapple chunks
  • 1 handful of greens
  • 6-7 mint leaves
  • 7 frozen cherries or about a half cup
  • 1 cup canned coconut milk
  • ½ water
  • ½ teaspoon chia seeds
Instructions
  1. Place all ingredients but the chia seeds into blender and blend.
  2. Top with chia seeds.
